Taste of Home Tuesday: Oven Parmesan Chips

I was looking for something easy to make this week and figured a fun snack would be just the ticket. I had actually wanted to do a dessert because I’ve been craving sweets lately. I think it’s my body telling me to bulk up because winter seems to have arrived!

Flipping through my Taste of Home Best Loved Recipes cookbook, I came across the Oven Parmesan Chips in their Sides selection. The picture in the book makes them look delicious.
Now as usual, there’s always a tweak to my recipes. Sometimes intentional, other times, like this time, a mistake. lol At least this was a tasty mistake. I accidentally used shredded not grated Parmesan cheese.
My Doodle doesn’t care for potatoes…pretty much in any form aside from french fries and he’s still not a huge eater of them. I try to convince him that when they’re made a different way, they taste different.

He gave it the good old Brownie Bite and threw the rest away. Sigh…he’s lived a sheltered life, what can I say? Buddy came in and he went to town on them! So, he and I feasted on our afternoon snack.

One mixing of this recipe will cover one serving on a baking sheet. So, I guess if you want to make more than one batch, you’d double or triple the recipe. There was literally none left after the one batch. Also, don’t go over 20 minutes. Once those potatoes get cooking, they’ll burn easy. Take it from me. I barely got to salvage any from the first batch.

I loved the paprika flavoring and the shredded Parmesan cheese made it all come together! I will definitely be making these more often!

Yum, yum, yum!! We have a ton of potatoes from a harvest festival we attended and I am looking for new ways to make them. I normally don't like potatoes (mashed and baked - yuck!) but thin in the oven with cheese - yes please :)
